Vegan Pumpkin Chocolate Cupcakes

Forgot to take a picture of all the cupcakes frosted and they unfortunately took a nose dive in the parking lot this morning, but should still taste good!

  • 2 cans pumpkin
  • 1 box chocolate fudge cupcake mix
  • 1 1/2 cup margarine
  • 3-4 cups confectionery sugar
  • 1 1/2 brown sugar
  • cinnamon
  • nutmeg

Mix one can pumpkin with the cake mix + 1/2 cup oil and 1/2 cup water. NO EGG. May need to add up to 1 extra cup of flour for thickness. Bake for 18 mins at 350.

Mix 1/2 cup pumpkin with the margarine, brown and confectionery sugar, 1 tsp vanilla, 1 tsp cinnamon, and 1/2 - 1tsp nutmeg. Frost cupcakes and garnish with additional cinnamon.
